On February 6-8, 2014, in Saint-Petersburg World Pastry Champion Michel Willaume gave a Christmas masterclass at Cooking School #1. During these three days, a group of 16 people under our guidance made 23 cakes, countless tartlets, petit fours, macarons.
At these workshops, I am an assistant, an interpreter and an organizer.
– «Cappuccino» cake: sponge cake brownie with hazelnuts, Krum with dark chocolate, coffee mousse, whipped cream.
– «Bagatelle» cake: pistachio sponge cake, cherry jelly, vanilla cream «bavarua», white chocolate glaze.

Tart with pears. Ingredients: crunchy shortcrust pastry, classic almond cream with 5 spices, poached pears with blackberry and red wine.
