On February 3-5, 2014, in Saint-Petersburg World Pastry Champion  Michel Willaume  gave a Christmas master class at Cooking  School #1.

At these workshops, I am an assistant, an interpreter and an organizer.

Course program:


-Cake «World champion» 2001. The same cake, for which Michel was named World Champion in 2001. Ingredients: shtreyzel with orange and hazelnuts, chocolate Sponge cake, caramel candy, caramel spiced cream, mousse based on dark chocolate.

-Cake “Valentine’s Day”. Ingredients: Coconut Sponge cake, “compote” of bright exotic fruit, coconut mousse, exotic glaze.

Tartu in «Modern» style:

– Honey tart with hazelnut. Ingredients: shortcrust pastry with hazelnuts, roasted and caramelized hazelnuts, honey cream.

Pai with passion fruit. Ingredients: an upgraded version of the well-known “Lemon Tart”.

-Tart “Cheese cake” with sea buckthorn. Ingredients: special shortcrust pastry, Sponge cake  “cheese cake”, sea buckthorn filler cream with white chocolate. As decor-buckthorn jelly and mint marshmallow.

The program also includes – a large quantity of works with chocolate and chocolate decoration. Creating a range of mini desserts «Petit Fours», guimaves (marshmallow).
